Mint Humus: With a Bite to it!

When my niece Lisa took a bunch of mint from our garden to plant in hers, I was inspired to try something new.

I’m cooking with Bush’s Beans more these days, and coming up with healthier snacks. And I experimented and came up with a zesty new humus!

Bush’s Beans Mint Humus

1 can Bush’s Garbanzo Beans

3/4 cup olive oil

1/2 cup chopped fresh mint

3-5 garlic cloves

1/4 chopped red onion

3 caps full of Rice Vinegar

Few sprinkles of Stevia

Salt

White Pepper

Snip fresh mint from the garden.

Drain the beans.

Add the pressed garlic and other ingredients.

Including chopped mint.

Blend in Cuisinart.

Pour into a serving dish. Serve with crackers or fresh veggies.

I love the “bite” that this dip has!
